Cork is oak bark packed with suberin, a waxy polymer that waterproofs each cell — the exact property that seals wine also locks microbes out. Whole corks can bob around a pile for five years barely changed; chopping or grinding exposes the unprotected interior and finally lets fungi in. Cork is so durable it's also why the stuff gets recycled into flooring.
