why?

A potato chip is thin potato starch saturated with oil during frying, and that oil is what changes the math: fat repels the water microbes need and turns rancid in a slow bin, which is what brings rodents. Salt is the second half of the problem, since seasoning powder is largely sodium chloride that stays in the finished compost. Stale chips broken up and scattered through a large pile are genuinely nothing; a family-size bag emptied into a small bin is not.
