why?
Eggplant flesh is spongy, air-filled tissue — the same open structure that soaks up oil in a pan lets microbes race through it in about two weeks. The glossy skin and the green calyx are tougher and hang on a few weeks longer. Its many soft seeds rarely produce volunteers outside genuinely warm climates.
