why?
Celery is about 95% water, so most of a stalk simply drains into the pile within days. The strings — the same collenchyma-and-vascular fibers that catch in your teeth — are cellulose reinforcement and hang on a few weeks longer, especially from tough outer ribs. Chopped crosswise, string and stalk finish together.
